Carbohydrates can be divided into "fast sugars" and "slow sugars". Fast sugars are the sugars found in sweet-tasting foods such as confectionery, cakes, wine, honey, fruit and so on. Everyone knows that they must be avoided especially since soon after assimilating fast sugars we begin to feel hungry again. Bread and pasta as well as pulses and lentils and dried beans contain slow sugars. these are called slow sugars because the body takes longer to assimilate them than fast sugars. As far as our metabolism goes, fast sugars encourage insulin secretion, which in turn makes the body produce and store fats.

Carbohydrates only provide 4 calories per gram, but we ormally eat them in considerable quantities to feel full.
